Bestnut Fruitcake Mix.

Method

  1. Mix fruit cake mix and brandy together and leave overnight.
  2. Preheat oven to 150c.
  3. Cream the butter and sugar together and eggs. Beat well after each addition until light and fluffy.
  4.  Add fruit mixture, mixing well.
  5. Sift dry ingredients together, add to fruit mixture and mix well.
  6. Line a 20cm square cake tin with 2 layers of brown paper and greaseproof paper.
  7. Grease well, turn the mixture into tins with a spatula.
  8. Bake in a preheated oven for 2 1/2 hours.
  9. Test the center of the cake with a skewer. If baked, the skewer will come out clean.
  10. Allow cooling completely in the tin.
  11. Turn out and remove the lining.
  12. Sprinkle with brandy, seal with cling film.
  13. Store in a cool place.
  14.  Sprinkle a little brandy over the cake once a week to keep it moist.
  15. Decorate with icing as desired.

Ingredients

1kg Bestnut Fruit Cake Mix.

250ml Brandy.

250g Margarine.

180ml Brown Sugar.

5 Eggs.

560ml flour.

Pinch of salt.

1/2 tsp ground nutmeg.

1/2 tsp ground cinnamon.

1 tsp mixed spice.

1 tsp ground ginger.

1/2 tsp ground cloves.

1/2 tsp bicarbonate of soda.
