Almond and Date Energy Bar!


Prepare the Dates: If the dates are dry, soak them in warm water for 10-15 minutes to soften. Drain the water before using.

Blend Almonds: In a food processor, pulse the toasted almonds until they are finely chopped. Set aside a small portion if you prefer chunkier bars.

Combine Dates and Almonds: Add the pitted dates to the food processor with the chopped almonds. Blend until a sticky dough forms.

Add Sweetener and Flavorings: If using, add honey or maple syrup, vanilla extract, a pinch of salt, and any optional add-ins like shredded coconut, cocoa powder, or spices. Pulse until everything is well combined.

Press into Bars: Line a baking dish or tray with parchment paper. Transfer the mixture onto the parchment paper and press it down firmly and evenly to create a compact layer about 1/2 to 3/4 inch thick.

Chill and Cut: Place the tray in the refrigerator for at least 1-2 hours to set. Once firm, remove the mixture from the tray and cut it into bars or squares using a sharp knife.

Serve or Store: Serve these delicious almond and date bars immediately, or store them in an airtight container in the refrigerator for up to two weeks.
