Method

  1. Prepare the Peanut Sauce:
    • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, ginger, garlic, and warm water.
    • Adjust the consistency by adding more water if needed. Set aside.
  2. Cook the Tofu (Optional):
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
    • Add cubed tofu and cook until golden brown on all sides. Remove and set aside.
  3. Stir-Fry the Vegetables:
    • Heat the remaining 1 tablespoon of oil in the skillet.
    • Add the mixed vegetables and stir-fry for 5-7 minutes until they are tender but still crisp.
    • Toss in the edamame or green beans, and cook for another 2 minutes.
  4. Add Nuts:
    • Add the cashews or peanuts to the skillet, stirring for 1-2 minutes until lightly toasted.
  5. Combine with Sauce:
    • Pour the prepared peanut sauce over the vegetables and nuts.
    • Toss everything together until evenly coated and warmed through.
  6. Serve:
    • Serve hot over a bed of rice or noodles.
    • Garnish with chopped green onions, sesame seeds, lime wedges, and chilli flakes, if desired.
