Method
- Prepare the Peanut Sauce:
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, ginger, garlic, and warm water.
- Adjust the consistency by adding more water if needed. Set aside.
- Cook the Tofu (Optional):
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add cubed tofu and cook until golden brown on all sides. Remove and set aside.
- Stir-Fry the Vegetables:
- Heat the remaining 1 tablespoon of oil in the skillet.
- Add the mixed vegetables and stir-fry for 5-7 minutes until they are tender but still crisp.
- Toss in the edamame or green beans, and cook for another 2 minutes.
- Add Nuts:
- Add the cashews or peanuts to the skillet, stirring for 1-2 minutes until lightly toasted.
- Combine with Sauce:
- Pour the prepared peanut sauce over the vegetables and nuts.
- Toss everything together until evenly coated and warmed through.
- Serve:
- Serve hot over a bed of rice or noodles.
- Garnish with chopped green onions, sesame seeds, lime wedges, and chilli flakes, if desired.
