Grilled Prawns & Nutty Noodle Broth.

Method

1️⃣ Marinate the Prawns: Mix soy sauce, sesame oil, ginger, garlic, honey, and lime juice. Coat prawns and let sit for 15 minutes.
2️⃣ Make the Broth: In a pot, bring broth to a simmer. Add soy sauce, fish sauce, miso, ginger, garlic, lemongrass, and chilli. Simmer for 15 minutes, then strain.
3️⃣ Cook the Noodles: Prepare noodles as per packet instructions. Drain and set aside.
4️⃣ Grill the Prawns: Heat a grill pan or BBQ over high heat. Grill prawns for 2-3 minutes per side until charred and cooked through.
5️⃣ Assemble: Divide noodles into bowls, pour over hot broth, and top with grilled prawns.
6️⃣ Finish with Nuts & Seeds: Sprinkle toasted cashews (or peanuts), sesame seeds, coriander, spring onions, and chilli flakes for crunch and extra flavour!

Ingredients

For the Prawns:

  • 12 large prawns, peeled & deveined

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tsp grated ginger

  • 1 clove garlic, minced

  • 1 tsp honey

  • Juice of ½ a lime

For the Broth:

  • 4 cups chicken or vegetable broth

  • 1 tbsp soy sauce

  • 1 tsp fish sauce (optional)

  • 1 tbsp miso paste

  • 1 thumb-sized piece of ginger, sliced

  • 2 cloves garlic, smashed

  • 1 stalk lemongrass, bruised

  • 1 small red chilli, sliced (optional)

  • 150g rice noodles (or egg noodles)

Nutty Topping:

  • ¼ cup toasted cashews or crushed peanuts

  • 1 tbsp sesame seeds

  • 2 tbsp chopped fresh coriander

  • 2 tbsp chopped spring onions

  • 1 tsp chilli flakes (optional)
